Fall Sweet Treat: Apple Cake

Ingredients:

2 Eggs

2 Cups of Sugar

1 Cup of Canola Oil

2 Teaspoons of Vanilla

2 Teaspoons of Cinnamon

1 Teaspoon Baking Soda

1/2 Teaspoon Salt

3 Cups Flour

3 Cups Chopped Apples

Directions:

1. Preheat oven to 350′

2. Beat eggs in mixing bowl.

3. Add sugar, oil and vanilla.

4. In a separate bowl combine cinnamon, baking soda, salt and flour.

5. Slowly add the flour mixture into the wet ingredients until dough has formed.

6. Add chopped apples to dough (if you dont have a kitchen-aid mixture with a dough hook, then it is best to mix in apples by hand as dough becomes very thick.)

7. Pour into a lightly greased bundt cake pan and cook for 45 – 60 minutes. – Recipe from the kitchen of Selma Horan

Great recipe! Though not a great day for baking, I was short on white flour, white sugar and canola oil. So I substituted in some whole wheat flour, brown sugar and apple sauces. Made the cake a bit heavier, but still delicious!

I made this recipe last night, and it was amazing! I only had medium eggs, so I used 2 to start and added a 3rd when the dough was still too dry. I also substituted olive oil instead of canola oil, and I probably used slightly less then a cup. Also added just a little extra vanilla and cinnamon. Turned out great!

I am making this cake tonight …using my fuji apples from my tree… however, the dough is more like cookie dough and I am wondering if I missed something… I hope it turns out okay!!!

I made your cake for a get together with friends today. I have been canning apple pie filling and just cut up a few extra apples for this cake. So easy to make in a kitchen already hectic with canning. Delicious, too! I ran out of white flour and didn’t want to leave the canner so just substituted 2c of the flour with whole wheat. The cake still turned out moist and fairly light. I served it with a little whipped cream on the side and everyone loved it.

I have made 3 of these cakes and each time they came out very tasty, moist and yummy. Everyone that taste it, love it and ask me for the recipe. I love the taste and I also find them fairly easy to make. I would love to experiment more with it when I have more time when I go to making it next time.

I have made this twice in the last 2 weeks, it is amazing. I added pecans the second time, turned out just as good.

Thank you for you recipe. I cut it in half and used 1 stick of butter instead of oil. I also used 21 oz. can apples instead of apples. I also used half white sugar and half brown sugar.

Basically its your recipe cut in half. its really good. one time I used can peach for the apples.

Love the recipe and love your site! Listening to Steve Tyrell “Simple Life” as I write with the apple cake baking in the kitchen. It all is a nice reminder of how to appreciate the gifts all around us that get lost in the noise of the day.
