THE WIFE’s Chicken Soup

Ingredients:

  • 1 Large White Onion (Diced)
  • 6 Cloves Garlic
  • I Bunch Curley Parsley
  • 4 Carrots (Peeled and Diced)
  • 6 Celery Sticks (Diced)
  • 1 Large Cleaned Chicken
  • 2 TBSP Salt
  • 2 TBSP Pepper
  • 5 Carrots (Chopped)
  • 5 Celery Sticks (Chopped)

Directions:

  1. Boil a large pot of water with the first 8 ingredients for 1 hour. Checking to make sure chicken and vegetables are cooked.
  2. Using a strainer drain broth into an empty pot, setting aside cooked vegetables and chicken to cool.
  3. Shred white chicken meat, set aside.
  4. take the cooked vegetables and using a blender, blend with 1 cup of broth until pureed, set aside.
  5. Bring broth to a boil, add shredded chicken and chopped carrots and celery with a pinch of salt (Add more water if needed)
  6. Take your vegetable puree and using a strainer, strain into the liquid broth, disregard the rest.
  7. Cook soup until chopped vegetables are cooked (between 30 -45 minutes)
