THE WIFE’s Chicken Soup
Ingredients:
- 1 Large White Onion (Diced)
- 6 Cloves Garlic
- I Bunch Curley Parsley
- 4 Carrots (Peeled and Diced)
- 6 Celery Sticks (Diced)
- 1 Large Cleaned Chicken
- 2 TBSP Salt
- 2 TBSP Pepper
- 5 Carrots (Chopped)
- 5 Celery Sticks (Chopped)
Directions:
- Boil a large pot of water with the first 8 ingredients for 1 hour. Checking to make sure chicken and vegetables are cooked.
- Using a strainer drain broth into an empty pot, setting aside cooked vegetables and chicken to cool.
- Shred white chicken meat, set aside.
- take the cooked vegetables and using a blender, blend with 1 cup of broth until pureed, set aside.
- Bring broth to a boil, add shredded chicken and chopped carrots and celery with a pinch of salt (Add more water if needed)
- Take your vegetable puree and using a strainer, strain into the liquid broth, disregard the rest.
- Cook soup until chopped vegetables are cooked (between 30 -45 minutes)
